Mango Almond Squares
A quick, vitamin- and mineral-rich energy source for in-between moments—Mango Almond Squares are simply ideal.
Ingredients
- 100 g dried mango
- 50 g chopped almond kernels
- 1 tbsp Sesame seeds
- 50 g ground almond kernels
- 100 g hearty oatmeal flakes
- 30 g butter (2 tbsp)
- 50 g whole cane sugar
- 100 g liquid honey
- 1 tsp orange juice

Finely chop the mango.

Roast the chopped almonds and sesame in a non-stick pan without fat until lightly browned.

Combine mango, chopped and ground almonds, sesame, and oatmeal flakes in a bowl.

Melt butter in a pan. Add sugar, honey, and orange juice; stir to boil.

Cook for 2 minutes over medium heat while stirring, until the mixture becomes liquid and golden yellow.

Remove pan from heat. Stir in the mango-almond mixture thoroughly until a uniform mass forms.

Spread the mixture onto a baking sheet lined with parchment paper and roll it out under plastic wrap to about 1.5 cm thickness. Remove the wrap and let the mass cool for about 20 minutes.

Cut the mango almond block into roughly 30 squares and allow them to dry overnight on a work surface.
