Mandarin Ice Cream

- 5 beautiful organic mandarins
- 30 ml orange liqueur
- 2 egg whites
- 100 g powdered sugar
- 1 tbsp orange sugar
- 100 g whipping cream
- mint (for garnish)

Cut a lid off four mandarins and carefully hollow them out with a sharp-edged spoon. Squeeze the juice from the fruit flesh. Grate zest from the last orange finely and squeeze its juice as well. Mix the liqueur and zest together.

Beat the egg whites until stiff, then gradually add powdered sugar and orange sugar while continuing to beat until all sugar is dissolved. Gently fold in the juice with liqueur, transfer to a shallow metal bowl, and freeze for about 1 hour, stirring every 20-30 minutes. In the meantime, whip the cream until stiff. Fold the whipped cream into the partially frozen ice cream mixture and continue to freeze, stirring occasionally, for an additional 4 hours.

Fill the hollowed mandarins with the finished ice cream, replace the lids, and serve garnished with mint.
