Summer snacking: Try the vegan Magic Shell Smoothie Bowl with strawberries from Spoonsparrow!

Ingredients

  • 4 tbsp coconut oil
  • 500 g Strawberries (frozen)
  • 300 g Soy yogurt
  • 100 ml Oat drink (Oat milk)
  • 1 tbsp Peanut butter (or other nut butter)
  • 1 tbsp Hazelnuts
  • 1 tbsp Pistachios
  • 2 tbsp cocoa powder
  • 4 Strawberries (optional; or other fresh, seasonal fruit)

Instructions

    Place coconut oil in a saucepan and heat gently over low heat until liquid, 3-5 minutes.

    Meanwhile, place frozen strawberries, soy yogurt, oat drink, and nut butter in a blender and blend until a creamy consistency is achieved. Chop hazelnuts and pistachios.

    Smooth the liquid coconut oil with cocoa powder. Pour the strawberry smoothie mixture into a bowl, spread it smooth, and pour the coconut oil mixture over it. Swirl the bowl slightly to create a smooth surface. Immediately sprinkle with hazelnuts and pistachios. Wash, clean, and halve the strawberries. Once the chocolate layer has set, serve Magic Shell Smoothie Bowls with fresh strawberries.
