Avocado and Salmon Wraps

These avocado and salmon wraps from Spoonsparrow are just as delicious for dinner as they are for a take-away lunch!

Ingredients

  • 150 g Romaine lettuce
  • 2 Carrots (à 100 g)
  • 0.5 cucumber
  • 2 Avocados
  • 1 tsp lemon juice
  • 0.5 bunch dill
  • 200 g Skyr
  • 1 tsp Mustard
  • Salt
  • Pepper
  • 4 whole wheat tortillas
  • 200 g smoked salmon

Instructions

    Wash the romaine lettuce, spin dry and cut into fine strips. Peel and grate the carrots finely. Wash the cucumber and slice thinly. Halve the avocados, remove the pit, scoop out the flesh, slice and drizzle with lemon juice. Wash dill, shake dry, pluck the tips and chop finely.

    Mix Skyr with mustard, dill, salt and pepper until smooth.

    Spread the wraps on a work surface and evenly coat with the Skyr cream. Distribute the lettuce, carrots, cucumber, avocado and salmon on top.

    Fold in the avocado and salmon wraps from the bottom, roll tightly, cut in half and arrange on plates.
