Ingredients

  • 60 baking sheets (about 3 cm diameter)
  • 3 egg whites
  • 2 tsp lemon juice
  • 150 g powdered sugar
  • 200 g ground peeled almond kernels
  • 3 tbsp cold moka coffee
  • 100 g pine nuts

Instructions

    Preheat the oven to 150°C fan. Line a baking sheet with parchment paper and arrange the sheets on it.

    Beat the egg whites with the lemon juice into very stiff peaks. Gradually fold in the powdered sugar, continuing to beat until a firm, glossy batter forms. Gently fold in the almonds, pine nuts, and coffee. Fill the mixture into a piping bag fitted with a large round tip. Pipe small mounds onto the sheets and bake in the preheated oven for about 15 minutes.
