Ingredients

  • 120 g walnuts
  • 5 tbsp brown sugar
  • 120 g dried dates
  • 3 egg whites
  • 1 pinch salt
  • 150 g powdered sugar

Instructions

    Preheat the oven to 160°C (320°F) with top and bottom heat.

    Coarsely chop the walnuts and lightly toast them in a non-stick pan without fat, stirring. Sprinkle with sugar, let caramelize slightly, spread on parchment paper and cool. Pit the dates and finely chop them. Chop the cooled walnuts again and mix with the dates.

    Beat the egg whites with salt until stiff peaks form, gradually adding powdered sugar. Continue beating until the mixture is glossy and holds peaks. Fold the nut-date mixture into the meringue and drop small spoonfuls onto a parchment-lined baking sheet using a tablespoon.

    Bake in the preheated oven for 15-20 minutes. Remove, cool completely, and serve.
