Ingredients

  • 3 eggs
  • 90 g fine sugar
  • 1 tsp ground anise
  • 1 tbsp Lemon Juice
  • 90 g flour
  • anise seeds (for sprinkling)

Instructions

    Separate the eggs. Beat the egg whites with lemon juice into stiff peaks. Whisk the yolks and fold them in. Sift the flour over the mixture, add the ground anise, and gently fold everything together. Spread the batter onto a small baking sheet lined with parchment paper and smooth it out.

    Sprinkle with anise seeds if desired and bake in a preheated oven at 180 °C (convection) for about 15–20 minutes. Remove and let cool. Then cut into sticks (2 × 8 cm) with a very sharp knife.
