Macarons with Blueberries

- 4 egg whites
- 1 tsp lemon juice
- 250 g very fine sugar
- 200 g ground almonds (peeled)
- 1 tbsp blueberry syrup (more if desired)
- blue food coloring
- 80 g blueberries
- 250 g cream cheese
- 2 tbsp powdered sugar

Preheat the oven to 150°C with top and bottom heat. Beat the egg whites with lemon juice until very stiff peaks form. Gradually add the sugar, beating until a glossy, firm mixture forms and gently fold in the almonds. Stir in the syrup and a touch of food coloring, then pipe the batter into large round tips onto parchment-lined baking sheets to create small half-moons about 2 cm across. Bake in the preheated oven for about 40 minutes, leaving the oven door slightly ajar.

Meanwhile, if needed, wash, rinse, and pat the blueberries dry. Blend them finely with powdered sugar and stir into the cream cheese.

Remove the finished macarons from the oven, transfer to a rack, and let cool. Spread the cream onto half of the macarons and top with the remaining ones. Gently press together and serve.
