Almond Plate

Ingredients

  • 100 g peeled almonds
  • 200 g soft butter
  • 150 g brown sugar
  • 2 egg yolks
  • 200 g Flour
  • 50 g cornstarch
  • 1 tsp cinnamon
  • 1 pinch cloves
  • 1 pinch baking powder
  • 50 ml blueberry juice

Instructions

    Finely chop the almonds.

    Beat the butter with the sugar until fluffy. Fold in the egg yolks. Mix the flour with the starch, cinnamon, cloves, baking powder and almonds. Stir in half of the dry mixture, then knead the remaining half by hand. Shape into a roll about 6 cm in diameter, wrap in cling film and chill in the refrigerator for 1 hour.

    After chilling preheat the oven to 180°C (350°F) with top and bottom heat. Line baking sheets with parchment paper.

    Cut the dough into slices about 1 cm thick with a large knife and place them on the sheets spaced apart. Brush the tops with blueberry juice and bake in the preheated oven for 8-10 minutes.

    Do not overbake the cookies; they will firm up as they cool.

    Remove from the baking sheet with parchment paper and let cool on a rack.
