Ingredients
- 8 egg yolks
- 150 g powdered sugar
- 150 g Ground Almonds
- 2 heaping tsp cinnamon
- 0.25 tsp cloves powder
- 1 lemon (juice and zest)
- 5 egg whites
- butter (for the pan)
- sponge cake crumbs (for the pan)
- 200 g apricot jam
- 100 g almond slivers
- chocolate shavings
- 1 orange (orange zest)
- powdered sugar
Instructions

Beat egg yolks with powdered sugar until fluffy, add almonds, spices, lemon juice and zest, and continue beating for a few minutes. Whisk egg whites to stiff peaks, fold in 2–3 tbsp first, then the rest. Butter the springform pan and line with sponge cake crumbs. Pour batter into pan, smooth top, bake at 180°C for about 40 min. Remove and cool.

Warm apricot jam and strain if desired. Spread over cooled cake, sprinkle almond slivers. Garnish with chocolate shavings and orange zest, dust with powdered sugar.
