Apricot Macarons

Ingredients
- 100 g Dried Apricots
- 2 tbsp lemon juice
- 50 g fine rolled oats
- 50 g buckwheat
- 2 egg whites
- 150 g cane sugar
- 1 packet vanilla sugar
- 1 lemon (unprocessed; grated zest)
- 1 pinch cinnamon
- 1 pinch anise

Dice the apricots finely and drizzle with lemon juice. Toast the oats and buckwheat in a dry pan until lightly browned. Whisk the egg whites to stiff peaks, gradually folding in the sugar. Gently fold in the apricots, oats, and buckwheat.

Add the lemon zest, cinnamon, and anise. Drop spoonfuls of the batter onto parchment-lined baking sheet and bake at 150 °C for about 30 minutes.
