Ingredients

  • 2 peaches
  • 100 g coarsely chopped macadamia nuts
  • 200 g Flour
  • 2 heaping tsp baking powder
  • 150 g sugar
  • 200 g Sour Cream
  • 80 g melted butter
  • 1 pinch salt
  • 2 Eggs
  • 12 paper cups
  • 12 macadamia nuts (for garnish)

Instructions

    Place the paper cups into the muffin tin slots. Wash, quarter, pit and roughly cube the peaches. Mix flour and baking powder. Whisk sugar with sour cream, butter and salt. Beat in the eggs.

    Quickly fold the dry mixture, nuts and peaches together. Spoon batter into the tin cavities. Bake at 180°C (middle rack, fan 160°C) for 20-25 minutes. Let rest in the tin for 5 minutes, then transfer to a wire rack to cool. Serve garnished with macadamia nuts.
