Ingredients

  • 250 g flour
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 1 untreated lemon (juice and grated zest)
  • 125 g softened butter
  • 200 g sugar
  • 3 eggs
  • 200 g plain yogurt
  • 40 g raisins
  • 1 muffin tin (12 cups)
  • butter (for the tin)

Instructions

    Mix flour, baking powder, baking soda, vanilla sugar, lemon zest, and salt in a bowl.

    Cream the softened butter with sugar, then stir in lemon juice, eggs, and yogurt. Pour the wet mixture into the dry ingredients and stir just until the dry ingredients are moistened; fold in raisins.

    Grease the muffin tin cavities.

    Fill the cavities with batter. Bake in a preheated oven at 180°C (mid rack) for about 25 minutes. Let the muffins cool in the tin for ~5 minutes, then carefully remove them and let them cool completely.
