Orange muffins

Ingredients
- 260 g flour
- 2 tsp Baking powder
- 0.5 tsp bicarbonate of soda
- 2 tsp orange zest (untreated, grated)
- 3 medium oranges
- 1 egg
- 150 g brown sugar
- 100 ml sunflower oil
- 250 ml buttermilk
- butter

Preheat the oven to 180°C (350°F) with top and bottom heat. Cut 12 strips 5 cm high and 12 bottoms from parchment paper, grease cups and line the rims and bottoms with parchment.

Sift the flour into a bowl and mix thoroughly with baking powder, bicarbonate of soda and orange zest. Peel the oranges carefully with a sharp knife, removing the white pith. Slice the fruit segments from the separating membranes, halve them and catch the juice that drains. Squeeze out juice from the remaining orange parts. In a separate large bowl whisk the egg lightly. Then add sugar, oil, buttermilk and the orange pieces with juice and mix. Finally fold in the flour mixture gently until just combined. Pour the batter into the cups and place on a baking sheet.

Bake in the oven (middle rack) for about 20–25 minutes until golden yellow. Let the muffins rest in the cups for about 5 minutes, then remove from the molds, wrap the paper with twine or string and serve warm or cold (best served warm!).
