Apple Muffins with Sour Cream

Ingredients
- 250 g flour
- 2.5 tsp baking powder
- 0.5 tsp Baking soda
- 1 tsp cinnamon powder
- 300 g small diced apples (mixed with 2 tbsp lemon juice)
- 1 egg
- 120 g sugar
- 80 ml vegetable oil
- 1 packet vanilla sugar
- 150 g Sour cream
- 100 ml Buttermilk
- 50 g Raisins
- 50 g chopped lemon zest
- 12 paper cups
Instructions

Place paper cups into the depressions of a muffin tin.

In a bowl mix flour, baking powder, baking soda, cinnamon, raisins, lemon zest and apples.

In another bowl whisk egg, sugar, oil, vanilla sugar, sour cream and buttermilk and combine well.

Then add the dry ingredients and fold briefly until just wet.

Spoon batter into the muffin tin, sprinkle with crumb topping, and bake in a preheated oven at 180°C fan for about 25‑30 minutes until golden brown. Let the muffins rest in the pan for 5 minutes, then remove from the cups and cool.
