Lost Egg with Mushrooms

Ingredients

  • 0.5 baguette
  • 200 g mixed hard cheese (e.g., cheddar, herb cheese)
  • 4 tbsp white wine vinegar
  • 4 eggs
  • 500 g mushrooms (e.g., trumpet of death and champignons)
  • 2 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp chives

Instructions

    Preheat the oven to grill mode.

    Cut the baguette crosswise in half, then slice into 16 strips. Place on a parchment-lined baking sheet. Grate the cheese and sprinkle over the bread strips. Bake under the hot grill for about 5 minutes until crisp.

    Meanwhile, bring about 1 L of water to a boil, add the vinegar, and remove from heat. Crack each egg into a cup and gently slide it into the vinegar water. Poach for 4-5 minutes (the water should not be boiling).

    Clean the mushrooms; leave whole or cut into pieces depending on size. In a large pan with hot butter, sauté for 4-5 minutes. Season with salt and pepper and serve on plates. Lift the poached egg from the water with a slotted spoon and place in the center. Lightly season. Arrange the bread sticks and sprinkle with chives before serving.
