Ingredients

  • 3 sheets filo dough (ca. 180 g)
  • 80 g melted butter
  • 120 g smoked ham
  • 0.5 bunch chives (ca. 15 g)
  • 75 ml whipping cream (at least 30 % fat)
  • 350 g plain cream cheese
  • 6 Eggs
  • 50 g freshly grated Parmesan
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Preheat the oven to 180°C with top and bottom heat. Lay out the filo sheets and cut into 16 squares (12x12 cm). Brush four squares lightly with melted butter, place another square on each, brush again, and add a third square. Repeat until you have four layers of dough. Line four oven‑proof ramekins (7–8 cm diameter) with one filo square each.

    Cut the bacon into small cubes, fry in a pan until crisp, then remove and drain on kitchen paper. Wash the chives, dry, and cut into fine ribbons. Whisk together the cream, cream cheese, two eggs, bacon cubes, chive ribbons, and Parmesan; season with salt, pepper, and nutmeg.

    Fill each filo ramekin with the mixture and gently slide one beaten egg on top of each. Bake in the preheated oven for 20–25 minutes until golden. Remove, arrange on plates, and serve immediately.
