Ingredients

  • 250 g mixed ground meat
  • 2 tbsp herb quark
  • 2 tbsp breadcrumbs
  • 1 egg
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp sesame seeds
  • 1 tbsp Sunflower oil
  • 1 cucumber
  • 1 yellow bell pepper
  • 0.5 bunch Basil
  • 150 g cherry tomatoes
  • 1 pack mini mozzarella balls
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp ajvar (from jar)
  • 2 tbsp Sour cream
  • 2 tbsp mustard
  • 2 Tbsp whipping cream

Instructions

  1. 1.

    Knead the ground meat with herb quark, breadcrumbs, egg, salt and pepper; shape into 12 small balls and roll them in sesame seeds.

    Pan‑fry the balls in hot oil for about 10 minutes until golden brown. Remove and let cool.

    Wash cucumber and bell pepper. Slice cucumber into finger‑thick rounds.

  4. 4.

    Clean the pepper, halve it, remove seeds and white membranes, then cut into pieces. Alternate threading meatballs, cucumber and pepper onto six skewers.

    Toss basil leaves. Wash tomatoes. Drain mozzarella balls. Thread basil, tomatoes and mozzarella onto the remaining skewers, seasoning everything with salt and pepper.

    In a small bowl whisk together ajvar and sour cream. In another bowl mix mustard and whipping cream.
