Linzer Cookies

Ingredients
- 275 g butter
- 150 g sugar
- 2 tsp lemon zest (unprocessed)
- 50 g finely ground hazelnuts
- 350 g flour
- 4 egg yolks
- 3 tbsp lingonberry jam
- powdered sugar (for dusting)

Knead the butter with sugar, lemon zest, hazelnuts, flour and egg yolks quickly into a smooth dough. Shape into a ball and wrap in cling film for about 30 minutes in the refrigerator.

Roll the dough to about 2 cm thickness, cut out 1.5 cm wide slices, shape them into balls and place on a baking sheet lined with parchment paper with some space between. Press a small indentation in the center of each with the handle of a cooking spoon. Warm the lingonberry jam and fill the indentations. Bake in a preheated oven at 200°C on the second rack from below for about 10–12 minutes until golden yellow. Let cool and fill the indentations with remaining jam.
