Potato Dumplings with Plums

Ingredients
- 400 g starchy potatoes
- Salt
- 130 g flour
- 1 egg
- 12 ripe plum halves
- 6 tbsp sugar
- flour (for the work surface)
- 150 g butter
- 70 g breadcrumbs
- 0.5 tsp cinnamon
- 3 tbsp sugar
Instructions

Step 1: Wash the potatoes and cook them with skins on for about 25 minutes until soft, then drain, let steam off briefly, peel, and press hot through a potato masher into a bowl. Let the mash cool.

Wash the plums, halve them and remove the pits. Measure out all remaining ingredients and set aside.

Step 2: Add flour, egg and a pinch of salt to the mashed potatoes.

Step 3: Quickly knead with hands into a smooth dough; add more flour if needed.

Step 4: Let the dough rest for about 20 minutes. Then divide it into two portions and roll each into a 5 cm long rope on a floured surface.

Step 5: Divide each rope again into six pieces. Repeat the same process with the second half of the dough.

Step 6 and 7: Shape each piece into a dumpling, flatten it, place a sugared plum half on top, cover with another plum half.

Step 8: Wrap the plum with dough and shape into a dumpling again. Drop the dumplings into boiling water and let them cook for about 20 minutes, nudging occasionally so they rotate.

Optionally melt some butter in a pan, fry breadcrumbs until golden brown, stir in cinnamon and sugar.

Remove the dumplings with a slotted spoon, drain, and serve on plates topped with the breadcrumb mixture.
