- 400 ml crème double
- 120 g sugar
- 2 untreated lemons (juice and zest)

Bring the double cream and sugar to a boil while stirring, then let it simmer gently for 3 minutes. Remove from heat and fold in the lemon juice and zest (reserve some for garnish).

Divide into four molds and sprinkle with remaining zest. Chill for at least 3 hours before serving.
