Linzer Cake Heart

A delightful cake heart made with fresh ingredients from the cake category.

Ingredients

  • 200 g Flour
  • 200 g butter
  • 100 g powdered sugar
  • 100 g ground hazelnuts
  • 1 egg
  • 0.25 tsp ground cloves
  • 0.5 tsp ground cinnamon
  • 1 tsp grated lemon zest
  • 1 tbsp Lemon Juice
  • 1 round cake sheet
  • 500 g currant jam
  • 1 egg yolk
  • powdered sugar (for dusting)

Instructions

    Knead flour with butter and combine all remaining ingredients into a smooth shortcrust dough. Wrap the dough in cling film and refrigerate for one hour.

    Trim the cake sheet to fit the pan shape.

    Press 2/3 of the dough into the pan, place the cake sheet on top, and generously spread currant jam up to 1 cm from the edge.

    Roll the remaining dough into a ~1 cm thick log, lay it around the rim of the cake, pressing down. Roll out the leftover dough, cut small hearts, and arrange them on the cake.

    Whisk egg yolk with a splash of water, brush the dough with this mixture. Place in the preheated oven at 175°C and bake for 50 minutes.

    Once cooled, dust the crust and heart shapes with powdered sugar.
