Ingredients
- 300 g ground almonds
- 300 g flour
- 1 untreated lemon zest
- 0.5 tsp cinnamon
- 100 g sugar
- 1 egg
- 5 tbsp milk
- 150 g butter
- 150 g raspberry jam
- butter (for the pan)
- flour (for working)

Sift almonds and flour onto a work surface. Add egg, lemon zest, cinnamon, milk, and butter to the center and knead with the flour into a smooth dough. Wrap in cling film and chill for 30 minutes. Preheat oven to 160°C fan.

Grease the pan. Roll two-thirds of the dough on a floured surface, line the pan with it. Spread jam over the base. Roll out remaining dough and cut into ribbon strips with a pastry cutter. Arrange in a lattice pattern over the jam and bake for about 40-45 minutes. Let cool in the pan, then slice with a sharp knife and serve.
