Ingredients

  • 2 bulbs fennel
  • Salt
  • Pepper (freshly ground)
  • olive oil
  • 150 ml dry white wine
  • 8 mackerel fillets (ready-to-cook, about 100 g each)
  • 1 untreated lemon

Instructions

    Preheat the oven to 200°C fan.

    Wash and trim the fennel, cut into thick slices. Set aside the green for garnish. Place in a heat‑proof dish, season with salt and pepper, drizzle with olive oil, and roast for about 10 minutes until golden brown. Remove from the oven, flip the fennel, and deglaze with white wine. Pat the mackerel fillets dry, season with salt and pepper, and arrange on top of the fennel. Slice the lemon and scatter over the fish. Drizzle with olive oil and bake for about 15 minutes until cooked through.

    Garnish with fennel greens and serve with potatoes and crème fraîche if desired.
