Ingredients
- 300 g zucchini (grated)
- 1 small onion (finely chopped)
- 30 g flour
- baking powder
- 35 g Kefalotyri (or freshly grated Parmesan cheese)
- 2 tbsp chopped mint
- 2 tsp chopped flat-leaf parsley
- 1 pinch freshly ground nutmeg
- 25 g breadcrumbs
- 1 egg (lightly beaten)
- olive oil (for frying)
- lemon wedges (for serving)

Place zucchini and onion in the center of a clean kitchen towel, gather the corners and twist tightly to squeeze out as much water as possible. Transfer the zucchini and onion to a large bowl and mix with flour, baking powder, cheese, mint, parsley, nutmeg, breadcrumbs, and egg until well combined. Season strongly and work into a firm, sticky mixture by hand.

Heat oil in a large skillet over medium heat. Drop spoonfuls of the mixture into the pan, press down slightly, and fry for 4-6 minutes until golden brown on all sides. Drain on paper towels and serve hot with lemon wedges.
