Ground Meat Loaf with Vegetables and Mash

- 250 g ketchup
- 150 ml beef broth
- 3 tbsp strong coffee
- 3 Garlic cloves
- 2 Tbsp beet syrup
- 1 tbsp soy sauce
- 1 tbsp sharp mustard
- 1 tbsp Lemon Juice
- 1 tsp Paprika powder (sweet)
- 0.25 tsp cayenne pepper
- 0.25 tsp Ginger powder
- Salt
- 800 g mixed ground meat
- 1 onion
- 20 g butter
- 1 roll (from yesterday)
- 1 egg
- 2 tbsp Tomato paste
- 1 tsp Mustard
- Salt
- Pepper (freshly ground)
- 700 g potatoes
- 2 tbsp butter
- 200 ml milk
- Salt
- Pepper (freshly ground)
- nutmeg
- 2 tbsp chives curls
- 400 g Carrots
- 400 g Green Beans
- 2 tbsp butter
- Salt
- Pepper (freshly ground)

For the barbecue sauce, blend garlic with a pinch of salt into a paste.

Add all ingredients with the garlic paste to a pot and simmer uncovered for about 15 minutes until thickened. Let the barbecue sauce steep overnight.

Soak the roll in water for the loaf. Peel and finely chop the onion; sauté in butter until translucent. In a bowl, combine ground meat, onion, drained roll, egg, tomato paste, mustard, and spices; knead well and shape into a loaf. Place the loaf in a greased roasting pan and bake at 180°C for about 60 minutes. Brush the loaf thickly with barbecue sauce ten minutes before the end of baking and finish cooking.

For the potato mash, peel potatoes and boil in salted water for about 25 minutes; drain. Mash with butter, hot milk, salt, pepper, and nutmeg using a potato masher, then fold in chives curls.

Prepare vegetables: slice carrots diagonally into half‑rings after peeling. Trim ends of green beans and rinse. Boil carrots in salted water for 2 minutes, shock in ice water, drain. Add one tablespoon of salt to the same pot and boil beans for about 8 minutes; shock in ice water, drain.

Sauté carrots and beans in hot butter, seasoning with salt and pepper.

Slice the loaf and serve with potato mash and vegetables. Offer remaining barbecue sauce on the side.
