Ingredients
- 5 lemons
- 500 g yogurt
- 150 g powdered sugar (to taste)
- 4 egg whites
- 1 pinch salt
- lemon slice (for garnish)
- mint (for garnish)
Instructions

Squeeze the lemons to extract juice. Whisk the lemon juice with 50 g powdered sugar and yogurt until creamy. Chill for 1 hour.

Whip the egg whites with the remaining sugar and salt until stiff peaks form.

Fold the meringue into the chilled lemon-yogurt mixture.

Pour the batter into an ice cream maker or a shallow dish. Freeze for about 4 hours, stirring well with a fork every 30 minutes.

Scoop the frozen ice cream into bowls and serve with lemon slices and mint sprigs.
