Ingredients

  • 125 g flour
  • 1 pinch salt
  • 4 tbsp olive oil
  • 1 tbsp heavy cream
  • 1 Egg white
  • 1 tbsp Olive Oil
  • 3 onions (finely chopped)
  • Salt
  • pepper (ground)
  • 4 small slices goat fresh cheese
  • 1 egg
  • 1 Egg white
  • 150 ml Heavy Cream
  • 250 g Cherry Tomatoes
  • 1 tbsp basil (finely chopped)

Instructions

    Put all dough ingredients in a bowl, knead well, wrap in foil and refrigerate for 30 minutes.

    Oil the molds and preheat the oven to 170°C.

    Roll out the dough on a floured surface to about 2 mm thickness, cut into four pieces, line the molds, pricking several times with a fork, bake at 170°C for about 10 minutes until pale, then remove and cool.

    Sauté onions in hot olive oil until translucent, layer onions and cheese slices.

    Whisk egg and egg white with cream, season with salt and pepper, spread evenly over the molds.

    Bake the tarts in the preheated oven at 180°C for about 12 minutes until lightly browned.

    Halve cherry tomatoes, season with salt and pepper, sprinkle basil.

    Serve goat cheese tartlets topped with cherry tomatoes.
