Citrus Fruit Gratin with Vanilla Ice Cream

Ingredients

  • 3 egg yolks
  • 100 g sugar
  • 2 vanilla beans (scraped seeds)
  • 200 ml whipping cream
  • 2 oranges
  • 1 Lime
  • 1 grapefruit
  • 1 Clementine
  • 1 lemon
  • 2 Cinnamon sticks
  • 2 star anise
  • 2 cloves
  • 6 black peppercorns
  • 20 ml orange liqueur
  • 1 tsp lime zest
  • powdered sugar (for dusting)
  • 4 scoops vanilla ice cream

Instructions

    For the gratin mixture whisk the egg yolks with 80 g of sugar and the seeds from one vanilla bean until creamy. Whisk over a hot water bath, stirring constantly, until the mixture thickens, becomes light, creamy, and cools.

    Beat the cream stiffly and fold it into the egg mixture.

    Peel the citrus fruits with a sharp knife so that all white pith is removed. Separate the segments from the membranes. Squeeze out the membranes by hand and catch the juice.

    Caramelize the remaining sugar in a pan. Deglaze with orange liqueur and the collected citrus juice. Add the spices, the seeds of the second vanilla bean, and the lime zest; simmer until thickened. Then add the citrus segments and briefly swirl them in the caramel sauce.

    Remove the spices and distribute the fruit onto four deep plates. Pour the gratin mixture over the fruit and bake briefly under high heat or grill until golden brown.

    Dust with powdered sugar and serve with vanilla ice cream.
