Ingredients

  • 250 g flour
  • 2 tsp Baking powder
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 2 untreated lemons (juice and grated zest)
  • 125 g softened butter
  • 200 g sugar
  • 3 eggs
  • 250 g plain yogurt
  • 1 muffin tin
  • 250 g powdered sugar
  • 5 tbsp Lemon juice

Instructions

    Mix flour, baking powder, vanilla sugar, lemon zest, and salt in a bowl.

    Cream the softened butter with sugar, then add lemon juice, eggs, and yogurt. Pour the wet mixture into the dry ingredients and stir just until the dry components are moist.

    Grease the muffin tin.

    Spoon 2 heaping tablespoons of batter into each cup. Bake in a preheated oven at 180°C on the middle rack for about 25 minutes. They’re done when they lift from the top.

    Let the muffins cool in the pan for about 5 minutes, then carefully remove them and let them cool completely.

    For the glaze, whisk powdered sugar with lemon juice until thick, then coat the cooled muffins.
