Ingredients

  • 1 lemon
  • 1 Shallot
  • 2 tbsp lemon jam
  • 1 tsp mustard (medium hot)
  • 6 tbsp lemon oil
  • Salt
  • lemon pepper
  • 4 tbsp water

Instructions

    Peel the shallot and dice finely, then sauté in clear oil until translucent. Wash the lemon thoroughly and zest it finely; add the zest to the onions. Drip the oil from the pan into a tall container (mixing jug) and set the onions aside. Using a sharp knife, peel the lemon completely, removing the white pith.

    Cut the fruit segments from the separating membranes and catch the juice that drains out. Squeeze the juice from the remaining lemon parts. Add the lemon segments and juice to the oil. Stir in mustard, jam, and spices, then blend finely with an immersion blender. Fold in the shallot cubes, season to taste, and serve in small bowls.
