Herb Vinaigrette

A perfect after-work dressing – quick to make, healthy, and made with fresh ingredients.

Ingredients

  • 50 ml white wine vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp sugar
  • Sea salt
  • 75 ml vegetable broth
  • 100 ml sunflower oil (or olive oil)
  • 2 tbsp freshly chopped herbs (e.g., basil and parsley)
  • black pepper from the mill

Instructions

    Add the vinegar, lemon juice, sugar, a pinch of sea salt, and the broth to a bowl and whisk until combined. While whisking, slowly drizzle in the oil until emulsified.

    Finally stir in the herbs and season with additional salt and pepper to taste. If desired, transfer to a decorative bottle.
