Lemon Chicken Greek Style

Ingredients
- 1.4 kg chicken (1 whole chicken)
- 3 untreated lemons
- 2 tbsp Vegetable oil
- Salt
- pepper (ground)
- 250 ml poultry stock
- 2 tbsp honey
- 20 ml sherry
- Lemon slices (for garnish)

Preheat the oven to 180°C fan.

Wash and pat dry the chicken. Wash one lemon hot, grate its zest, mix half of the zest with 1 tbsp oil, a pinch of salt and pepper, and rub this mixture over the chicken.

Tie the legs together with kitchen twine and cross the wings on the back.

Slice the remaining lemons into rounds.

Place the prepared chicken breast‑side down in a heatproof dish and bake in the preheated oven for 30–35 minutes, occasionally spooning stock over it. Flip the chicken, top with lemon slices, and bake another 15–20 minutes.

Remove from the oven. Whisk honey, sherry, remaining lemon zest and 1 tbsp oil. Brush this glaze over the chicken and roast at 250°C for about 10–15 minutes until crisp golden brown.

Quarter the lemon chicken and serve on a platter with lemon slices as garnish.
