Lemon Chicken with Carrot Vegetables and Savoy Cabbage

- 4 chicken breast fillets (skinless)
- 800 g yellow carrots
- 2 untreated lemons
- 4 tbsp Honey
- 2 Garlic cloves
- 1 tbsp sharp mustard
- 1 tsp fresh thyme
- Salt
- pepper (ground)

Wash and pat dry the chicken breasts. Place them in a fireproof dish and score each with a knife 3-4 times.

Grate one lemon’s zest, squeeze its juice, and mix both with honey, minced garlic, and mustard. Rub this mixture over the chicken breasts and let rest covered for about 30 minutes.

Meanwhile peel and roughly cube the carrots. Add thyme to the breasts, season with salt and pepper. Peel the remaining lemon and cut into wedges; add them along with the carrots, combine everything, and bake in a preheated oven at 180°C (356°F) under/over heat for about 30 minutes. If needed, pour a little water. Season with salt and pepper and serve with steamed savoy cabbage if desired.
