Lemon Chicken

Ingredients
- 4 chicken thighs
- 2 lemons
- 2 Garlic cloves
- 0.5 tsp chili powder
- 1 tbsp liquid honey
- 3 tbsp olive oil
- 5 sprigs thyme
- 400 g waxy potatoes
- 400 g sweet potatoes
- 8 mild bell peppers
- Salt
- Pepper
Instructions

Rinse the chicken and pat dry. Wash the lemons hot, pat dry and zest. Squeeze the juice. Peel and finely chop the garlic. Mix with lemon juice, zest, chili, honey and oil. Rinse thyme, shake dry and mix into the chicken pieces with the marinade. Cover and refrigerate for about 2 hours.

Preheat the oven to 200°C (400°F) fan‑forced or conventional heat.

Peel and wash potatoes and sweet potatoes, cut lengthwise into strips. Wash bell peppers and spread them with the potatoes on a baking sheet. Remove chicken from marinade and place on top of vegetables. Pour remaining marinade over, season with salt and pepper, and bake in hot oven for about 35 minutes until golden brown.
