Ingredients

  • 1 whole chicken (about 1.4 kg)
  • 2 unwashed lemons
  • 1 onion
  • 1 bay leaf
  • 4 Garlic cloves
  • 3 tbsp vegetable oil
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • Salt
  • Pepper
  • 2 tbsp chopped parsley

Instructions

    Rinse the chicken inside and out, pat dry, and cut into ~5 cm pieces with a poultry shears. Wash the lemons, slice into wedges, set aside 4 wedges. Peel and halve the onion. Place the chicken parts, lemon wedges, onion, and bay leaf in a pot and fill with enough cold water to cover (about 1 L). Simmer gently for about 40 minutes over medium heat. Strain through a sieve, catch the liquid, and measure out ~250 ml.

    Peel the garlic and slice thinly. Sauté in hot oil until translucent, then add the poultry broth. Dissolve honey in the mixture, squeeze the remaining lemon wedges by hand into the sauce, and season with salt and pepper. Return the chicken pieces to warm them briefly in the sauce.

    Plate the chicken on dishes and sprinkle with parsley.

    Serve with potato pancakes and a mixed salad.
