Ingredients
- 1 chicken (approx. 1.4 kg)
- Salt
- pepper (ground)
- 1 tsp Ras el-Hanout
- 2 tbsp olive oil
- 300 ml poultry broth
- 2 untreated lemons
- 100 g sultanas
- 4 tomatoes

Rinse the chicken, pat dry and cut into about eight pieces. Season with salt, pepper and ras el-hanout, then brown all sides in a hot pan with oil. Deglaze with the broth. Wash the lemons, dry them, grate one for zest and juice it; slice the second lemon. Add everything with the sultanas to the chicken. Cover and simmer over low heat for about 25 minutes, stirring occasionally and adding more broth if needed. Boil the tomatoes briefly, cool, quarter and seed them, then add during the last five minutes.
