Lemon Chicken

Ingredients
- 1 chicken (1.2 kg)
- 2 untreated lemons
- 3 Garlic cloves
- 2 tbsp olive oil
- 1 tbsp butter
- 0.5 tsp Dried oregano
- 0.125 l white wine
- 0.125 l chicken broth (from the jar)
- Salt
- Pepper
- 100 g black olives
- 1 tbsp chopped parsley

Wash and pat dry the chicken, then cut into eight portions. Grate the zest of one lemon. Peel a garlic clove and press it through a press into a bowl. Mix the lemon zest, 1 tbsp olive oil, dried oregano, salt, and pepper. Rub this mixture onto the chicken pieces. Heat the remaining oil and butter in a roasting pan. Set the oven to 250°C, place the chicken pieces skin side down in the pan, and put the pan in the oven for 15 minutes.

Cut one lemon into wedges, squeeze the juice from the remaining lemons. Turn the chicken pieces in the pan, drizzle with lemon juice, and add the lemon wedges. Pour in wine and broth, lower the temperature to 200°C, and roast uncovered for another 30 minutes, turning several times. Add the olives five minutes before the end of cooking. Sprinkle with parsley and serve.
