Lemongrass Chicken Skewers with Salad

Ingredients
- 600 g chicken breast fillet (pre‑cooked)
- 4 Garlic cloves
- 2 stalks lemongrass
- 1.5 cm fresh ginger
- 100 ml light soy sauce
- 1 untreated lemon (zest)
- 2 tbsp apple juice
- 2 tbsp chopped coriander leaves
- 1 star anise
- 1 untreated lime (in wedges)
- 1 tbsp butter
- 10 peppercorns

Soak wooden skewers in water. Wash the chicken, pat dry and cut into cubes. Peel and chop the garlic cloves, then add them with the chicken cubes to a bowl. Rinse the lemongrass and peel the ginger; finely chop both.

Combine the soy sauce, lemon zest, lemongrass, apple juice, coriander leaves, ginger, and star anise with the chicken in the bowl. Cover and marinate for about 4 hours, turning occasionally.

Thread the marinated chicken onto the skewers and finish each skewer with a lime wedge. Heat butter in a pan, add the peppercorns, and sear the chicken skewers on all sides. Serve hot over fresh salad if desired.
