Lemon Chicken

Ingredients

  • 1 chicken (approx. 1.4 kg)
  • Salt
  • Pepper (freshly ground)
  • 4 untreated lemons
  • 250 g Cherry Tomatoes
  • 250 g pearl onions
  • 500 g waxy potatoes
  • 4 tbsp olive oil
  • 1 tbsp liquid honey
  • 100 g green olives (pitted)

Instructions

    Rinse the chicken and pat dry. Season inside with salt and pepper. Cut a lemon in half and place inside the chicken. Tie with kitchen twine.

    Grate zest from another lemon and squeeze its juice. Halve the remaining two lemons. Wash and trim the tomatoes. Peel the onions. Peel, wash, and cut potatoes into wedges. In an oven-safe pot, sauté vegetables in 2 tbsp hot oil. Deglaze with about 300 ml water, season with salt and pepper. Add lemon halves.

    Preheat the oven to 200°C fan (about 400°F).

    Mix remaining oil with lemon juice, zest, and honey; rub all over the chicken. Season with salt and pepper and place breast-side up on top of vegetables. Cover and roast for about 70 minutes. During the last ~20 minutes add tomatoes and olives and allow everything to brown slightly. If needed increase temperature and add water as necessary.
