- 350 g soft butter
- 350 g sugar
- 5 large eggs
- 225 g flour
- 2 tsp Baking powder
- 1 tbsp lemon zest
- 125 g cornstarch
- 2 untreated lemons (juice)
- butter (for the pan)
- powdered sugar (for dusting)

Preheat oven to 200°C with top and bottom heat. Beat soft butter, sugar, and eggs until thick and golden yellow. Mix flour, baking powder, lemon zest, and cornstarch; fold in lemon juice and butter mixture. Pour batter into a greased brioche pan, smooth top, and bake for about 50 minutes. If the cake darkens after half the time, cover with foil. Remove finished cake (test with toothpick), let cool in pan for ~5 minutes, then release and cool completely on a wire rack.
