Lemon Cream

Ingredients

  • 2 egg yolks
  • 50 g sugar
  • 1 lemon
  • 60 ml lemon juice
  • 60 ml white wine
  • 3 sheets gelatin
  • 2 egg whites
  • 200 g yogurt
  • 50 g whipping cream

Instructions

    Separate the eggs and beat the yolks with sugar until fluffy. Grate the lemon zest and gradually fold in the yogurt and wine. Soak gelatin in cold water, squeeze out excess, then dissolve it with the lemon juice over gentle heat.

    Stir some of the cream into the mixture, then fold the rest of the cream through. Chill until semi-set. Beat the egg whites very stiff and fold them into the semi-set cream. Chill again until firm. Before serving whip the cream stiff and decorate the dessert with it. Garnish with grated lemon zest.
