  • 3 untreated oranges
  • 2 untreated lemons
  • 2 Grapefruits
  • 500 ml milk
  • 1 Vanilla bean
  • 2 Eggs
  • 2 tbsp sugar
  • 2 tsp cornstarch
  • Pinch Salt
  • mint (for garnish)

    Peel the oranges, lemons and grapefruits, removing the white pith; separate the fruit segments from the membranes with a sharp knife. In a saucepan bring the milk to a boil with 2 tbsp of the split vanilla bean. Separate the eggs; whisk the yolks with sugar, cornstarch and remaining milk.

    Remove the hot milk from heat, discard the vanilla bean seeds, and slowly pour the egg mixture into the milk while stirring constantly. Return the vanilla milk to the stove, do not boil again, then strain it through a fine sieve. Whisk the egg whites with a pinch of salt until stiff peaks form; fold them into the slightly cooled sauce. Arrange the fruit segments in bowls, garnish with mint leaves and serve with the vanilla foam.
