Ingredients
- 3 egg whites
- 1 untreated lemon (juice and zest)
- 200 g powdered sugar
- 50 g lemon curd
- 200 g ground almonds (peeled)
- powdered sugar (for dusting)

Preheat the oven to 120°C fan.

Beat the egg whites with 1 tbsp lemon juice until stiff. Gradually add powdered sugar, beating until glossy and firm. Finely chop the lemon curd and mix it in with the lemon zest and almonds. Drop spoonfuls of dough onto a parchment-lined baking sheet. Bake for about 25 minutes until lightly golden.

Let cool on the tray and dust with powdered sugar before serving.
