The leftover wrap tastes great and is also a wonderful way to reduce food waste.
Ingredients
- 100 g salad (e.g., lamb's lettuce)
- 0.5 Avocado
- 1 tomato
- 0.25 bell pepper
- 0.2 cucumber
- 0.5 ball mozzarella
- 3 tsp basil pesto
- Salt
- Pepper
- 2 whole‑grain tortilla sheets
Instructions

Wash and dry the salad, then scoop out the avocado flesh from its skin. Wash the tomato, bell pepper, and cucumber.

Chop the salad, avocado, tomato, bell pepper, cucumber, mozzarella, and pesto on a large cutting board. Season with salt and pepper, then fill the tortilla sheets. Enjoy the leftover wrap immediately or take it to go.
