Oven Bites
Spoonsparrow oven-baked comfort food made from repurposed leftovers!
Ingredients
- 3 whole grain rolls (from yesterday)
- 3 apples
- 0.5 tsp ghee
- 20 g raisins
- 2 Eggs
- 700 ml milk (1.5% fat)
- 300 g Low-fat quark
- 2.5 tbsp maple syrup
- 2 tsp Cinnamon
- 30 g almond flakes
- 1 tbsp corn starch
- 1 pinch turmeric powder
- 0.5 tsp ground vanilla

Slice the rolls into about 1 cm thick pieces. Peel, wash, quarter the apples, remove cores and slice the flesh thinly.

Grease a baking dish with ghee, then layer bread slices and apple wedges alternately upright, sprinkling raisins between layers.

Whisk together eggs, 500 ml milk, quark, 2 tbsp maple syrup, and cinnamon; pour over the layered bread and apples. Sprinkle almond flakes on top and let sit for about 10 minutes.

Bake the Oven Bites in a preheated oven at 180°C (fan 160°C; gas: level 2–3) for approximately 40 minutes. After 20 minutes cover the dish with parchment paper to prevent the almonds from burning.

Meanwhile, make the vanilla sauce by whisking 5 tbsp milk with starch until smooth. Heat the remaining milk in a saucepan over medium heat for about 4 minutes, then stir in the milk-starch mixture along with turmeric, remaining maple syrup, and ground vanilla. Bring to a brief boil, then simmer on low heat for about 2 minutes until thickened. Serve the Oven Bites on plates and garnish with vanilla sauce.
