Strawberry Cream with Meringue

Ingredients

  • 2 egg whites
  • 1 splash Lemon juice
  • 100 g sugar
  • 300 g fresh ripe strawberries
  • 1 tbsp Lemon Juice
  • 200 g mascarpone
  • 50 g sugar
  • 100 ml heavy cream (at least 30% fat)
  • 1 Tbsp vanilla sugar

    Preheat the oven to 100°C with upper and lower heat. Whisk the egg whites with a splash of lemon juice until stiff peaks form, gradually adding the sugar. Continue whisking until the mixture is glossy and holds peaks. Transfer the mixture into a piping bag fitted with a small round tip and pipe small mounds onto a baking sheet lined with parchment paper. Bake in the preheated oven for about 2 hours, leaving the oven door slightly ajar. The meringues should remain white and not brown.

    Meanwhile wash and clean the strawberries, cut half of them lengthwise into halves and finely dice the rest. Puree with lemon juice. Mix mascarpone with sugar and strawberry puree until smooth. Whip the heavy cream with vanilla sugar until stiff peaks form and fold in two-thirds of the whipped cream. Remove the meringues from the oven, let cool, then roughly break them apart. Fill four glasses halfway with the mixture. Pipe the strawberry mousse into a piping bag fitted with a large round tip, spread it over the meringue, and top with strawberry slices. Pipe the remaining whipped cream into a small star tip and decorate on top of the strawberries. Serve well chilled.
