Ingredients

  • 2 pork schnitzels (about 180 g)
  • 1 egg
  • 2 tbsp flour
  • 2 tbsp butter
  • Salt
  • black pepper (freshly ground)
  • 2 bunches spring onions
  • 0.5 head frisée lettuce
  • 1 Tbsp toasted pine nuts
  • 1 tomato
  • 1 Garlic clove
  • 1 tbsp Olive Oil
  • a pinch salt
  • Pepper
  • 2 tsp balsamic vinegar

Instructions

    Season the schnitzels with salt and pepper, then dredge in flour. Beat the egg on a plate, dip the floured schnitzels through the egg, and quickly fry them in hot butter until lightly browned; remove while still pale.

    Blend all salad sauce ingredients in a blender and strain through a sieve.

    Wash and dry the lettuce by spinning it in a salad spinner.

    Trim the spring onions, wash them, cut off the green tips slightly, blanch in boiling salted water for about 6 minutes, then shock in cold water.

    Brush the schnitzels with a little oil and finish grilling on a hot grill; toss the spring onions in slightly hotter butter.

    Arrange the grilled schnitzels over the spring onions together with the lettuce. Drizzle the red salad sauce over the salad and sprinkle toasted pine nuts on top.
