Ingredients

  • 500 g ripe tomatoes
  • 2 onions
  • 2 Garlic cloves
  • 1 red chili pepper
  • 4 tbsp olive oil
  • 2 tsp Tomato paste
  • 50 ml red wine
  • 2 tbsp balsamic vinegar
  • Salt
  • sugar
  • 2 balls mozzarella
  • 1 handful basil
  • 8 tortilla sheets
  • 4 tbsp olive oil
  • 8 dried tomatoes (pickled in oil)
  • Salt
  • pepper (ground)

Instructions

    Wash the tomatoes, score them crosswise, blanch in boiling water, cool, peel, quarter, deseed and dice.

    Peel and finely dice the onions and garlic cloves. Wash the chili pepper(s), remove seeds and white membranes, and chop finely as well.

    Heat oil in a large pot and sauté the chili with onions and garlic in hot oil, stir in tomato paste and deglaze with red wine. Then add tomatoes and simmer for about 10 minutes while stirring. Finish by adding balsamic vinegar and season with salt and sugar.
