Leek and Apple Tart

Ingredients
- 150 g flour
- 1 egg
- 1 pinch salt
- 75 g butter
- flour (for working)
- 3 stalks leeks
- 2 tbsp butter
- Salt
- pepper (ground)
- 1 apple
- 1 tbsp Lemon Juice
- 150 g goat fresh cheese
- 2 sprigs Rosemary
- 100 g grated hard goat cheese
Instructions

Knead the flour with the egg, salt and chunks of butter into a smooth dough. If needed, add a little cold water or extra flour. Wrap in cling film and chill for about 30 minutes.

Preheat the oven to 160°C fan. Line a tart pan with parchment paper.

Wash, trim and slice the leeks into rings. Sauté them in hot butter for 3-4 minutes until translucent, then remove from heat and season with salt and pepper.

Peel the apple, core it and cut into thin slices. Drizzle with lemon juice.

Roll out the dough on a floured surface to match the pan size and line the pan, pressing up the edges. Spread goat fresh cheese over the base, sprinkle 2 tbsp of leeks, arrange apple slices, top with remaining leeks, scatter rosemary sprigs and grated hard goat cheese. Bake for about 40 minutes until golden brown. Serve hot in slices.
